Joe “Sack Boy” Coy, of Red Oak, Oklahoma, left our earthly presence on Friday, January 16, 2026, in Fort Worth, Texas.

Joe was born on February 19, 1951, in Boggy “Holler,” Oklahoma, to Charlie “Gip” Coy and Willie Irene (Owens) Coy. His mother called him “Joker,” Joe carried a lighthearted spirit that served him well throughout his life and came full circle in the way he greeted the world—with humor, warmth, and an open heart.

Joe graduated from Red Oak High School in 1969. He went on to graduate from Eastern Oklahoma State College in 1971 and Southeastern University in 1973.

A man who never shied away from hard work, Joe held many jobs that, by the good Lord’s will, saw him through the years. He worked as a service station attendant, oilfield roustabout, bank janitor, school teacher, cattle rancher—and, of course, “Sack Boy.” He picked cotton, cut pulpwood, hauled hay, mowed yards until the sun went down, and did whatever honest work was needed. You couldn’t walk into Roy’s without being met by his great big smile and a cheerful, “Hey, how are ya?”

On May 23, 1970, Joe married the love of his life, Brenda Knight. Together they raised two wonderful children, B.J. and Tiffany. Joe tried every day to be a good husband, father, grandfather, and friend, and was the heart and soul of every place he went. In his free time, he could often be found riding his Harley, listening to Conway Twitty, and enjoying the familiar rumble of the road—something he truly loved.

Joe was preceded in death by his parents, Charlie “Gip” Coy and Willie Irene (Owens) Coy; his brothers, Bob Coy and Tom Coy; and his sister, Wanda Coy.

He is survived by his loving wife, Brenda (Knight) Coy; his son, B.J. Coy and wife Kara, and their children, Koral and Klover; his daughter, Tiffany Coy, and her children, Lincoln Ferguson and Brooklyn Castillo; his sister, Judy Janeway and husband David of Red Oak; his sisters-in-law, Janice Coy of Yukon, Oklahoma, and Irene Coy of Kingfisher, Oklahoma; along with many beloved nieces, nephews, cousins, and dear friends.

Guided by a life of honest work, and deep love for family, Joe understood what truly mattered. As Scripture reminds us, “For we brought nothing into this world, and it is certain we can carry nothing out” (1 Timothy 6:7). Joe leaves behind not possessions, but a legacy of kindness, laughter, hard work, and love that will continue to live on in all who knew him.

The family will greet friends from 5:00 p.m. to 7:00 p.m. on Thursday, January 22, 2026 at Jones Harkins Funeral Home Chapel, Wilburton, Oklahoma.

A funeral service will be held at 1:00 p.m. Friday, January 23, 2026 at the C.C. Gillespie Field House, Red Oak, Oklahoma with Brother Mitch Mullin officiating. Burial will follow at North Rock Creek Cemetery in Red Oak, Oklahoma under the direction of Jones Harkins Funeral Home.

At Joe’s request, those wishing to send flowers are asked to please send a single red rose only.

In lieu of flowers, please make a memorial contribution to the Joe and Brenda Coy Endowed Scholarship Fund, EOSC Foundation. 1301 W. Main Street, Wilburton, Oklahoma 74578. 918-465-1761. Please make checks payable to the EOSC Foundation. https://host.nxt.blackbaud.com/adaptive-donor-form/?formId=629bf16e-d2fd-49db-8729-ef52716f03b0&envid=p-Zy4sFT5l4kCvNeSru92stA&zone=usa

Pallbearers will be Destry Harber, Jazzo Massey, Dal Moss, Wayne Sockey, Marcus Tubbs, and Charlie Watkins.

Our Beginnings

Jones~Harkins Funeral Home Wilburton, Oklahoma has a long and proud history of serving Latimer County with compassion and exceptional service. Jones~Harkins Funeral Home began as Abe Lapp Furniture and Hardware Store. The funeral home was operated in a backroom of the hardware store on Main Street. Wiley Burke later purchased the business and built a modern funeral home facility at 201 N. Central. Mr. Burke was joined by his son-in-law Denver Jones of McAlester, OK. After Mr. Burke's death, Denver Jones purchased the business and it became Burke-Jones Funeral Home. Mr. Jones and associate John Otterson worked with the families for many years until 1992 when Mr. Jones sold the location to a corporation due to health reasons. Stephen and Ruth Harkins purchased Jones Funeral Home and it again became an independent, family owned and operated funeral home. The Harkins family added their name and the business became known as Jones-Harkins Funeral Home. In 2005 the funeral home was completely renovated and updated. We are very proud of our funeral home and its long history of caring for the people of Latimer County. It is our desire to serve each family as though they were our own.
