Banana Bread 🍌 w/ Maple Syrup 🍁
Ingredients
• 3 very ripe bananas (mashed)
• 2 eggs
• 1/3 cup melted butter or coconut oil
• 1/3 cup maple syrup (I used 3/4 in this video)
• 1 tsp vanilla extract
• 1 tsp baking soda
• Pinch of sea salt
• 1 1/2 cups all-purpose flour
Optional: cinnamon, chopped walnuts, pepitas, dark chocolate chips, etc.
Instructions
1. Preheat oven to 350°F. Grease or line a loaf pan.
2. Mash bananas in a bowl until smooth.
3. Whisk in melted butter/oil.
4. Add eggs, maple syrup, and vanilla — mix well.
5. Stir in baking soda and salt.
6. Gently fold in flour (don’t overmix).
7. Pour into loaf pan and bake 50–60 minutes, until a toothpick comes out clean.
8. Let cool at least 15–20 minutes before slicing.
Storage
• Counter: 2–3 days (wrapped well)
• Fridge: up to 1 week
• Freezer: 2–3 months (slice first for easy grab-and-go)
