🥣 Lentil and Potato Soup Recipe:
Ingredients:
2 tbsp olive oil
3 garlic cloves, minced
½ cup chopped leeks (white and light green parts only)
1/3 cup diced celery
1/3 cup diced carrots
1 tsp curry powder
1 tsp salt
½ tsp ground black pepper
2 tbsp tomato paste
1½ cups brown lentils
4 cups low-sodium vegetable stock
12 oz Russet potatoes (with skins on), diced
2 bay leaves
1 tbsp red wine vinegar
2 tbsp minced parsley
🥣 Instructions:
Heat olive oil in a large pot over medium heat. Sauté garlic, leeks, celery, and carrots for 3-4 minutes or until softened.
Add curry powder, salt, black pepper, and tomato paste. Stir for 1 minute.
Add lentils, vegetable stock, potatoes, and bay leaves. Bring to a boil, then reduce to a simmer and cook for 25-30 minutes or until lentils are tender.
Stir in red wine vinegar and remove bay leaves.
Serve with parsley garnish.
