Learn about the history of fermented foods, how the industrial revolution sidelined them, and the impact that has had on our gut health. We’ll cover why these foods may be the most essential missing elements in modern diets and how to make them using fermentation and lacto-fermentation techniques.

Before mass production added preservatives, stabilizers, and sugar, condiments were ferments that supported digestion and flavor. We’ll explore how losing these foods has affected the standard American diet—and learn how to make delicious, traditional versions at home.

Rachel is a board-certified Licensed Acupuncturist with over 20 years of experience in Acupuncture, Asian Bodywork, and Classical Chinese Medicine. As the owner of SpringRoot Acupuncture & Wellness in Woodbury, CT, she has proudly served the community with attentive, personalized care since 2012.
She is passionate about preventative self-care, healthy living, and empowering individuals through education. Her interests include creating health and longevity through diet and movement, resistance training, reading, gardening, fiber arts, and exploring the world with her family.
