I make everything in a 9* 13 (lined with parchment)
• No mess
• No pots
• No dishes
This recipe was adapted from one that involves sautéing your onions + garlic + mushrooms together in a pan + I’m positive that will taste better but I promise this version tastes super delicious as well.
Ingredients
• 2 onions chopped
• 16 oz of mushrooms chopped - I always use a mixture of baby Bella + white
• 1 bag of shredded carrots
• 1 1/2 cups of brown basmati rice
• 2 cubes of frozen garlic
• 1/3 cup of olive oil
• 2 1/2 - 3 cups of water (you may need to add more later in the cooking)
• salt/pepper
• 1 tbsp dill
• 1 tbsp parsley
• onion salt
• garlic powder
• 1 tbsp coconut aminos
1. Chop your veggies and place all the ingredients in your 9*13 and mix well.
2. Cover and bake in the oven on 350 for 2-3 hours (yes, it takes longer but for me this trumps more dirty dishes and messy kitchen)
3. Check on your rice in the middle, mix it and you may want to add more water if you like the rice softer.
