Are you a driven individual who has a passion for providing exceptional meals for large groups of people? We believe breakfast, lunch and dinner should be healthy, delicious, and fun. And, as our Cook/Dietary Aide, you get to play the most important role in ensuring that is the case.

Prairie View Healthcare Center is currently seeking a full time Cook/Dietary Aide to join our dietary department. We are seeking a team-oriented individual who takes pride in their work and has a passion for food! Our enhanced dining program provides culinary excellence and tasty, appealing and nutritious foods.

Essential Functions:
*Prepare pre-planned cycle menus in an efficient and effective manner to provide nutritious, good tasting, and appetizing food for residents.
*Perform food preparation tasks as assigned.
*Reads production orders on tray cards to determine items to place on tray.
*Places items, such as eating utensils, napkins, straws, condiments, and tray cards on trays.
*Determine if the food prepared is of the highest possible quality in taste and flavor.
*Assist in planning cooking schedules. *Confirm foods are ready on time for tray service.
*Maintain and improve standards of food storage, preparation, and services.
*Assist in checking food supplies on food order forms as they arrive from vendors.
*Maintain orderly and correct storage of food items; dry, freezer, and refrigerator storage.
*Pours juices and beverages (coffee, tea, milk, cocoa) and serves on tray at correct temperature, neatly, and in amounts called for at the proper time.
*Serve assigned food on trays at proper time, attractively, and at correct temperature.
*Pushes carts to halls or kitchen.
*Washes dishes and cleans work area, tables, and cabinets:
*Maintains cleanliness and orderliness of dish machine or area.
*Empties trash cans daily and cleans them thoroughly. Replaces liners and returns cans to stations.

Knowledge, Skills, and Abilities:
*Demonstrated knowledge of high standards of food preparation, sanitation, hygienic methods of food preparation and storage.
*Previous experience preparing food in an institutional setting preferred.
*Interpersonal skills necessary to establish effective relationships with department staff, supervisors, and other departments.
*Ability to read, write, and follow oral and written directions in English.
*Demonstrates competency in operating kitchen equipment.
*Moderate to heavy lifting (50 pound maximum), bending, reaching, and stooping.

Education, Licensure, and Experience:
Requires current Food Handlers card (or ability to obtain one) issued by local Health Department.
Prior cooking experience in a skilled nursing environment is preferred

Prairie View Healthcare Center is now accepting applications for a skilled Business Office Manager (BOM) to join our team. The primary function of this position is to maintain current and accurate records of Accounts Receivable (A/R), Accounts Payable (A/P), payroll, admissions, bank deposits, census, and resident’s personal fund interest-bearing accounts. Understanding and routinely processing Medicaid, Medicare and insurance billing, and collection of co-insurance are key responsibilities for this position.

Requirements: High School diploma or equivalent required.
A minimum of two years’ business office experience preferred.
Knowledge of medical insurance billing to include Medicaid, Medicare is preferred

Recipe Wednesday: Salmon Quinoa Burger with Avocado Spread. Salmon has been proven to reduce symptoms of depression, strengthen bones, and prevent cell damage.

2 cups water
1/2 cup quinoa
6 ozs. cooked salmon, flaked
1/2 cup old-fashioned rolled oats
1/4 cup onion, finely chopped
1 large egg, lightly beaten
pinch salt
freshly ground pepper, to taste
2 avocados
1/4 cup reduced-fat mayonnaise
2 green onions, sliced
1 tsp. fresh lemon juice
1/4 tsp. ground red pepper (cayenne) or to taste
1 cup baby arugula
8 whole-grain slider buns, split

In small saucepan, combine water and quinoa; cover. Bring to a boil; reduce heat. Simmer 10 minutes or until water is absorbed and quinoa; gently mix until combined. Divide mixture into 8 portions; shape each into patty. Coat griddle with nonstick spray; heat over medium heat. Add salmon patties: cook 5 minutes. Turn over; cook 5 minutes longer or until heated through.

Meanwhile, peel avocados; remove and discard pits. Place avocados in bowl; mash with fork. Stir in mayonnaise, green onions, lemon juice, and cayenne. Divide arugula evenly among bottom halves of buns. Top each with a salmon patty and about 2 tablespoons avocado spread. Cover with top halves of buns.

Recipe Wednesday: Hazelnut-Mustard Chicken. This chicken coated in hazelnut adds rich flavor and good fat.

1/2 cup hazelnuts, crushed and divided
1 tbsp. mustard seeds, crushed
1 tbsp. dijon mustard
2 tsps. honey
freshly ground pepper, to taste
4 (4-oz.) boneless, skinless chicken breast halves

Heat oven to 375F. Place wire rack on baking sheet with sides. Coat rack with nonstick spray.

In small bowl, combine 2 tablespoons crushed hazelnuts, mustard seeds, mustard, honey, and pepper; mix well. Brush mustard mixture over all surface of chicken Place remaining crushed hazelnuts in large resealable plastic food-storage bag. Add mustard-coated chicken breasts; shake to coat with nuts. Place chicken on wire rack. Bake 45 minutes or until internal temperature of chicken is 165F.

Per serving: 220 calories; 25 g protein; 6 g carbohydrate; 3 g sugar; 1 g fiber; 1 g fiber; 10 g fat; 1.5 g saturated fat; 0 g trans fat; 65 mg cholesterol; 140 mg sodium

Recipe Wednesday: Strawberry Mousse with Chia Seeds. Try this instead or high fat cream-filled mousse. Chia seeds bring good fat and fiber.

1 cup frozen unsweetened strawberries
2 tbsps. plus 1 1/2 cups vanilla greek yogurt, divided
1 tbsp. water
1 tsp. agave syrup
1/4 cup chia seeds
fresh strawberries (optional)

In blender (or in small bowl using immersion blender), combine frozen strawberries, 2 tablespoons yogurt, water, and agave syrup. Puree until blended. In small bowl, stir together remaining 1 1/ 2 cups yogurt and the chia seeds. In each of two clear glasses, layer one-half of yogurt mixture. Top each with one-half of pureed strawberries. Garnish with fresh strawberries, if using.

Per serving: 290 calories; 22 g protein; 39 g carbohydrate; 22 g sugar; 10 g fiber; 7 g fat; 0.5 g saturated fat; 0 g trans fat; 10 mg cholesterol; 60 mg sodium

Recipe Wednesday: Salmon Skewers. Salmon is heart-healthy and here is paired with veggies that are high in vitamins.

12 ozs. salmon fillet, cut into 1-in. cubes
1/4 cup basil pesto
1 large yellow bel pepper, cut into 1-in. cubes
1 fennel bulb, cut into 1-in. cubes
30 cherry or grape tomatoes

Heat boiler. Coat baking sheet with nonstick spray.

In bowl, toss together salmon and 2 tablespoons pesto to coat. Thread salmon, bell pepper fennel, and tomatoes onto 12-inch skewers, alternating. Place on baking sheet. Brush with some of remaining pesto. Broil 6 minutes; turn skewers over. Brush with remaining pesto. Broil 6 minutes longer or until salmon is cooked through.

Per serving (makes 4 servings): 250 calories; 24 g protein; 10 g carbohydrates; 3 g sugar; 3 g fiber; 14 g fat; 3 g saturated fat; 0 g trans fat; 60 mg cholesterol; 190 mg sodium
