✨Fava beans are in peak season. While they are a labor of love, it’s so worth it. You have to shell, blanch and then peel the skin off each bean before you can eat. I usually make a simple salad with them with olive oil, lemon, pecorino and a salt and pepper but wanted to try something new. I made a fava bean and mint purée that was luscious and minty, perfect on top of a toast baguette. In a food processor add cooked beans, mint, olive oil, heavy cream, salt, and pepper. Garnish with grated pecorino. Look for them at your locals farmers market✨
