Want a delicious, easy cookie recipe that actively nourishes? My homemade oatmeal cookies are made with simple quality ingredients like h**ps and chia seeds, spelt flour and oats, making them a tasty and smart choice 🍪
Here׳s the recipe:
-1 large egg
-1.5 tbsp olive oil
-2 tbsp vanilla extract
-1/4 cup maple syrup or honey
-1 cup rolled oats
-3/4 cup spelt flour
-1 tsp baking soda
-2 tbsp cinnamon
-pinch of pink salt
-1/4 cup dark chocolate chips (75%+ cocoa)
Optional add ins:
-Berries
-Chopped Nuts
Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
Combine the wet ingredients: In a medium bowl, whisk together the egg, olive oil, vanilla extract, and maple syrup (or honey) until well combined.
Mix the dry ingredients: Add the oats, spelt flour, baking soda, cinnamon, and pink salt to the wet mixture. Stir until just combined; be careful not to overmix.
Fold in the add-ins: Gently fold in the chia seeds, h**p seeds, and dark chocolate chipsusing a spatula.
Scoop the dough: Drop rounded tablespoons of dough onto the prepared baking sheet, about 2 inches apart. Flatten each cookie slightly with the back of a spoon (they won’t spread much on their own).
Bake for 12 to 15 minutes, or until the edges are golden brown and the centers are set.
Cool the cookies on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy!
