Adding to my list of favourite fruits! ⁣

Soursop is a tropical fruit with a creamy and sweet taste and a hint of tang. Some describe it as a delicious blend of pineapple, banana and papaya. ⁣

It’s high in fibre which can help promote regularity, plus its low on the glycemic index. ⁣

You can enjoy its flesh as is when it’s ripe, or add it to smoothies, oatmeal or chia seed pudding if you want to be creative!⁣

How to eat more veggies? Make a large cold salad that keeps well in the fridge for a few days.⁣

This week I made Peruvian chopped salad. It’s vibrant and fresh flavours helped brightened most of my meals.⁣

𝐑𝐞𝐜𝐢𝐩𝐞:⁣
1 cup frozen corn kernels⁣
1 cup frozen lima beans or edamame⁣
½ cup diced radishes⁣
½ cup diced red onion⁣
1 cup crumbled feta or queso fresco ⁣
1-2 jalapeno peppers ⁣
¼ cup sliced black olives⁣
2 tablespoons finely chopped fresh mint leaves ⁣
2 tablespoon finely chopped fresh cilantro or parsley⁣
4 tablespoons extra virgin olive oil ⁣
3 tablespoons red wine vinegar⁣
Juice of ½ lemon⁣
½ teaspoon fine sea salt⁣
¼ teaspoon freshly ground black pepper⁣
1 cup diced tomatoes⁣

1. Boil corn and lima beans per package directions. Drain and rinse under cold water.⁣
2. Make vinaigrette by whisking together olive oil, vinegar, salt and pepper.⁣
3. Mix together the corn, lima beans, vinaigrette and remaining ingredients together in a large bowl and serve.⁣⁣⁣⁣
