I don’t usually make vegetable stock since I prefer the whole animal protein stock vibe, but this was specially prepared for my next retreat.

I’m preparing a vegetarian menu for the retreat and don’t prefer commercial dried or wet stock… for multiple reasons… anyway… thankfully Mum reminded me how easy it is to prepare your own veggie stock and I did just that! Thanks Mum! 🧡

Sourdough flatbreads have become a ‘thing’ in my kitchen! Quick, completely delicious and sooo nourishing in the best possible ways!
I use the best quality Virgin, Cold-pressed Olive oils I can find - my latest favourite is the range🤍
You’ve gotta try this recipe if you enjoy good gut health 😬

Nothing is as fresh and as good as grass-fed Farm butter - blended with home grown herbs & a sprinkle of red onion & garlic optional.

I love home made herb butter & use it to cook with or spread on freshly baked sourdough or melted on fresh home made pasta! Delish & so versatile! 💚

This is by far my best homemade green dressing/sauce! 💚 I usually don’t follow a formal recipe and may use my recipe as a guide when I haven’t made it in a while! I love the freshness of the herby flavours and simply add fresh green leaf herbs I have growing in the garden. The combo of Parsley, Chives and Basil is very nice but added Thyme, Mint and Rocket can also create some unique herbful flavours!

I also love making this dressing because it’s the best way to use up any extra avo to be enjoyed in an unusual way.

The acidity of the vinegars and lemon juice keeps the vibrant green colour and the it doesn’t brown.

Here is my version of this yummy dressing for you to try yourself!💫

Green Goddess Dressing Ingredients:
•1/2 tsp chopped fresh Parsley•1 cup Baby spinach•1/2 Avo (optional)•1/2 cup chopped fresh Chives•1/4 cup chopped Basil (optional) •1 Garlic clove•3 Tbsp white wine Vinegar•1 Tbsp Apple cider Vinegar•3 Tbsp real, from a real lemon Lemon juice•1/2 cup Olive oil•1/2 cup Greek yogurt•1/4 cup Mayo•1 tsp Dijon mustard•2 tsp of sugar•Salt and Pepper to taste In a blender, blend all ingredients together until smooth.

Adjust according to thickness and taste - adding more lemon juice or oil or seasoning.
