🎂 Festive Pumpkin Spice Greek Yogurt Cake Recipe
Ingredients:
• 1 cup pumpkin purée
• 1 cup plain Greek yogurt
• 3 large eggs
• 1/2 cup maple syrup or honey
• 2 tsp pumpkin pie spice
• 1 tsp vanilla extract
• 1/2 tsp baking soda
• 1/4 tsp salt
Instructions:
1️⃣ Preheat oven to 180°C and line or grease a loaf tin.
2️⃣ Whisk together the pumpkin purée, yogurt, eggs, maple syrup (or honey) and vanilla.
3️⃣ Add pumpkin spice, baking soda and salt. Mix until smooth.
4️⃣ Pour into your tin and bake 35–45 minutes, until the centre is set.
5️⃣ Let cool, then (optionally) frost with Greek yogurt or cream cheese and sprinkle with nuts.
