These Egg Muffins are a fantastic option to prep in bulk and have handy for breakfast, lunch or snacks!

Ingredients (for 10 muffins)
1 capsicum, diced
1 tomato, diced
2 handfuls baby spinach, chopped
1 small zucchini, grated
1 red onion, chopped
8 eggs
3 cloves garlic, minced
1 tsp paprika
1/2tsp celtic salt

Oil or line muffin trays
In a bowl combine eggs, paprika, garlic and salt. Whisk.
Sprinkle chipped vegetables evenly into muffin cups.
Pour egg mixture over vegetables.

Bake at 180'C for 10-15mins until cooked through
