Roast Chicken Power Plate 🥗✨

Okayyyy this plate is straight-up comfort meets fresh Mediterranean vibes. We’ve got crispy golden roasted chicken, buttery baby potatoes, a crunchy cucumber-tomato salad with blue cheese crumbles, briny olives, and fresh greens. Balanced, colorful, and totally next-level delicious. Let’s make it happen! 🔥

𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬

For the Roast Chicken:

2 bone-in, skin-on chicken thighs or 1 small chicken leg quarter
1 tbsp olive oil
2 cloves garlic, minced
1 tsp dried oregano
½ tsp smoked paprika
½ tsp thyme
Salt & freshly cracked black pepper

For the Baby Potatoes:

1 lb baby yellow potatoes
1 tbsp olive oil
½ tsp garlic powder
½ tsp dried rosemary
Salt to taste

For the Fresh Salad:

1 cup sliced cucumber
1 cup cherry tomatoes, halved
¼ red onion, sliced
2 tbsp crumbled blue cheese
Handful of mixed greens or leaf lettuce
5–6 Kalamata olives

Simple Lemon Dressing:

1 tbsp olive oil
1 tbsp lemon juice
Pinch salt & pepper
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬
Roast the Potatoes:
Preheat oven to 400°F (200°C). Toss baby potatoes with olive oil, garlic powder, rosemary, and salt. Roast 25–30 minutes until fork-tender and lightly golden.
Season the Chicken:
Rub chicken with olive oil, garlic, oregano, paprika, thyme, salt, and pepper.
Roast the Chicken:
Place chicken skin-side up on a baking tray. Roast for 35–40 minutes until skin is deeply golden and crispy, and internal temp hits 165°F (74°C). Let rest 5 minutes before serving.
Prepare the Salad:
In a bowl, combine cucumber, tomatoes, red onion, and blue cheese. Toss lightly with olive oil and lemon juice. Add fresh greens on the side for that crisp contrast.
Assemble the Plate:
Plate the roasted chicken alongside the baby potatoes. Add the fresh salad and olives. Sprinkle a little chopped parsley over the chicken for that chef-level finish.
