Hooray! It’s salad season. A well built salad can make a filling and nutritious and delicious meal! Greens alone could leave you hungry (no pun intended 😂). Add a wholesome carb, a lean protein and a healthy fat to combat hunger and keep you fuelled for the afternoon. Mix your different coloured vegetables for maximum nutrition!

Give these a go! They are yummy, protein-rich and a great source of vitamin D!
Ingredients
Eggs, 6 large (300 g)
Parsley, 2 tablespoons (8 g)
Olive oil, 1/4 teaspoon (1 g)
Salmon, 140 g (140 g)
Salt and pepper, 1 pinch (0.1 g)
Low fat milk, 1/4 cup (61 g)
Mushrooms, white, raw, 1 cups (97 g)
Spinach, raw, 1 handful (28.8 g)
Instructions
Preheat the oven to 180C.
In a bowl, whisk together the eggs and milk.
Add the chopped spinach, mushrooms, smoked salmon, parsley, olive oil, salt, and pepper. Mix well.
Grease a muffin tin with cooking spray or olive oil.
Divide the egg mixture evenly among the muffin cups.
Bake for 15-20 minutes or until the frittata cups are set and slightly golden on top.
Remove from the oven and let them cool for a few minutes.
Gently remove the frittata cups from the muffin tin and serve warm or at room temperature

Give these Salmon and Mushroom Egg Frittatas a go! They are an easy protein dish packed with vitamin D boosting foods!
Recipe:
Ingredients
Eggs, 6 large
Parsley, 2 tablespoons
Olive oil, 1/4 teaspoon
Salmon, smoked or cooked, 140 g
Salt and pepper, 1 pinch
Low fat milk, 1/4 cup

Instructions
