L. O. V. E. yourself everyday, make these Healthier Love Chunk Oats Cookies.

Ingredients

Cookies
2 cups rolled oats
1 ripe banana (mashed)
2–3 tbsp honey or maple syrup
2 tbsp nut butter (peanut, almond, or cashew)
1 tsp vanilla extract
Pinch salt
Optional: cinnamon or chopped nuts
Chocolate Cover
100–150 g dark chocolate (70% or higher if you want it healthier)

Method:

Make the cookie dough
Mix oats, mashed banana, honey/maple syrup, nut butter, vanilla, and salt until combined. Dough should be sticky but scoopable.

Shape
Scoop tablespoons onto a baking tray lined with baking paper. Flatten slightly
Bake at 180°C for about 12–15 minutes until golden and set.
Cool completely
Important before adding chocolate.

Chocolate covering
Melt dark chocolate (microwave in 20 sec bursts or double boiler).
Dip half each cookie OR spread chocolate on top OR fully coat.
Place on baking paper and let set (fridge = faster).

Make Them Even Healthier
Add chia or flax seeds
Swap half oats for oat flour for softer cookies

Dark Chocolate Date & Peanut Butter Bark

Ingredients
200g dark chocolate (70–85%)
Medjool dates, chopped
Natural peanut butter
Mixed nuts, chopped
Desiccated coconut or coconut flakes
Optional: sea salt

Method
Melt the chocolate
Melt dark chocolate gently (double boiler or microwave in short bursts).
Spread
Line a tray with baking paper. Pour melted chocolate onto the tray and spread thinly with a spatula.

Add toppings
Scatter chopped dates evenly
Spoon small dollops of peanut butter over the chocolate
Sprinkle nuts and coconut on top
Light pinch of sea salt if you like that sweet–salty vibe

Set
Place in the fridge for 20–30 minutes until fully set.
Break
Once firm, break into rustic bark pieces.
Store
Airtight container in the fridge for up to 10 days.

Swirl the peanut butter slightly with a knife for that artisan bark look

Add pumpkin seeds or cacao nibs for extra crunch
Keep chocolate thin so it snaps nicely
