Beef & Pineapple Kebabs with Cashew Rice

Serves 4.
1 Serve = 2 CC + ½ Fruit + 2 Protein + 1 Fat
Better Choice Recipe

Preparation 20 minutes
Cook 4 - 6 minutes (depending on how you like your steak cooked)

Ingredients
30ml (2 tbsp) soy sauce
20ml (4 tsp) maple syrup
30ml (2 tbsp) rice vinegar.
½ small pineapple, (cubed)
500g sirloin steak, cut into 4cm chunks
4 red peppers, each cut into 6 pieces
10ml (2 tsp) oil
¼ tsp salt
¼ tsp pepper

For the rice:
160g brown rice
20g roasted cashews, chopped
¼ cup coriander (chopped)
30ml (2 tbsp) lime juice.

1. Prepare the braai.
2. Cook the rice as per packet instructions.
3. To make the sauce combine the soy sauce, maple syrup and rice vinegar.
4. Thread the pineapple, sirloin and red peppers onto skewers; brush with oil and season with salt and pepper.
5. Braai the kebabs, turning occasionally, for 4 minutes. Brush the kebabs with sauce and braai until the pineapple is lightly charred, and the steak is cooked as desired (3 to 4 minutes for medium-rare).
6. Transfer to plates.
7. Fluff the rice. Fold in the roasted salted cashews, coriander and lime juice.
8. Serve with kebabs.

Beef & Pineapple Kebabs with Cashew Rice

Better Choice Recipe
