Pineapple Coconut flapjacks 🥞🍍🥥
Sweet pineapple and coconut come together in these fluffy tropical pancakes that are perfect for the upcoming winter days🍍🥞.
INGREDIENTS
- 1 ½ cups all-purpose flour
- 2 tbsp granulated sugar
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 ¼ cups well-shaken canned coconut milk
(not light)
- 1 large egg
- 3 tbsp melted coconut oil (plus extra for the
pan)
- 1 tsp pure vanilla extract
- 1 cup finely chopped fresh pineapple (about ½
a small pineapple)
- ½ cup unsweetened shredded coconut,
divided
- Maple syrup or honey, for serving
INSTRUCTIONS
Step 1
Toast ¼ cup shredded coconut in a dry pan over medium heat for 2–3 minutes until golden. Set aside.
Step 2
In a bowl, mix flour, sugar, baking powder, baking soda, and salt.
Step 3
In another bowl, whisk together coconut milk, egg, melted coconut oil, and vanilla.
Step 4
Add the wet ingredients to the dry ingredients and mix gently. Fold in chopped pineapple, toasted coconut, and the remaining coconut.
Step 5
Heat a lightly greased pan over medium heat. Pour in ¼ cup batter for each pancake.
Step 6
Cook for 2–3 minutes until bubbles form, then flip and cook for another 1–2 minutes until golden.
Step 7
Serve warm with maple syrup, honey, or extra pineapple.
