Celery and Celeriac leaves contain a variety of vitamins and mineral salts.They are reported to have a hormone which has an effect similar to that of insulin.Celery also
stimulates the digestion,and is good for gout and rheumatism.The celery plant was originally a medicinal plant.All parts of celery plant are edible,either raw or cooked.The leaves are as tasty as the stalks,and even the seeds have the same nutty flavor.
It is an excellent seasoning for diabetics and for anyone on a salt-reduced diet.
Celery Sticks with cheese
Clean celery sticks and choose long and flat ones.Leave on some leaves.Press cream cheese through sieve,add some milk and mix until smooth and fluffy. The mixture should remain thick.Add freshly chopped celery leaves according to test or until mixture looks fairly green.Either serve as a dip with celery sticks or arrange small heaps of cream cheese on the lower white base of the celery sticks.
