๐Ÿฆ Ice cream sandwich! The perfect summer treat.

What you'll need ~
1 tub of vanilla ice cream (or see our previous posts for a recipe to make your own!)
100g unsalted butter
2 tablespoons golden syrup
1 teaspoon bicarbonate of soda
120g flour
80g rolled oats
100g caster sugar
80g desiccated coconut
1 teaspoon vanilla extract
zest from 1 orange

Let's get baking ~
Preheat the oven to 180ยบC. Line 2 large baking trays with baking paper.
Melt the butter in a small pan over a low heat, then stir in the golden syrup. In a small bowl, combine the bicarbonate of soda with 3 tablespoons of boiling water, then stir it into the butter mixture.
Combine the flour, oats, sugar and coconut in a medium bowl. Make a well in the middle, then add the butter mixture, vanilla extract and orange zest.

Give the wet ingredients a good mix, then gradually stir in the dry ingredients to combine.
Place heaped tablespoons of the mixture onto the prepared baking trays, leaving a rough 3cm gap between each one. Place in the hot oven for around 10 minutes, or until golden, then transfer to a wire cooling rack to cool completely.
Spread the ice cream onto the biscuits once they have cooled and top with another biscuit.

Yoghurt Panna Cotta.
An impressive yet easy dish for the festive season!

What you'll need ~
3 leaves of gelatine
400ml cream
100g caster sugar
2 teaspoons vanilla paste
400g full cream yoghurt
400g strawberries
4 tablespoons elderflower cordial

Put the gelatine into a small bowl and cover with cold water. Pour the cream into a pan with the sugar and vanilla paste. Place on a medium-low heat until the mixture just starts to bubble, then turn the heat off.
Remove the gelatine leaves from the water and whisk into the pan until melted, followed by the yoghurt. Once smooth and combined, divide between espresso cups, small glasses or moulds, place on a tray lined with kitchen paper (to prevent them sliding about), cool, cover and leave to set in the fridge overnight.

The Next Day
Hull and halve the strawberries. Mix with the cordial in a nice bowl and leave to macerate for an hour or so.
Either serve the panna cotta in their cups, glasses or moulds, or turn them out on to little plates or saucers โ€“ the easiest way to do this is by carefully dipping each cup into a bowl of boiling kettle water for 20 seconds, or until you get a wiggle, then place a plate on top and confidently flip out. Spoon over some strawberries and syrup.

Yoghurt Flatbread.
A delicious side dish for your next curry night or snack platters!

What you'll need ~
What you'll need ~
350g self-raising flour, plus extra for dusting
1 teaspoon baking powder
350g full cream yoghurt
Garlic & herb butter:
2 cloves of garlic
1 bunch of fresh parsley
40g butter

Let's get cooking ~
Mix together all the flatbread ingredients with a spoon, then use clean hands to pat and bring everything together. Dust a clean work surface with flour, then tip out the dough. Knead for a minute or so to bring it all together.

Put the dough into a flour-dusted bowl and cover with a plate, then leave it aside. If making the garlic butter: peel the garlic cloves and crush them with a garlic crusher.
Finely chop the parsley, discarding the stalks.
Melt the butter in a small pan over a medium heat, then stir through the garlic and chopped herbs, then set aside.

Dust a clean work surface and rolling pin with flour, then divide the dough in half, then divide each half into 6 equal-sized pieces (roughly the size of a golf ball). With your hands, pat and flatten the dough, then use a rolling pin to roll each piece into 12cm rounds, roughly 2mm thick. Use a knife to cut 6 lines into the centre of each round, leaving about 3cm at each end.
Place the griddle pan on a high heat, then once hot, cook each one for 1 to 2 minutes on each side, or until it has puffed up, turning with tongs.
Brush the flatbreads all over with herby garlic butter as they come off the griddle, then pile onto a serving board and enjoy!

Butter Biscuits ๐Ÿฅ„ with coffee buttercream filling.

What you'll need ~
200g salted butter
70g icing sugar
1 teaspoon vanilla paste or vanilla extract
210g cake wheat flour
30g cornflour
20g fresh cream

For the coffee buttercream filling
2 Tablespoons instant coffee
100g salted butter, at room temperature
200g icing sugar, sifted
1 teaspoon vanilla paste
2 Tablespoons cream

Let's get baking ~
Preheat the oven to 180ยฐC and line a baking sheet with baking paper.
Beat the butter, icing sugar and vanilla until light and fluffy. Scrape down the bowl as required. Add the flour and cornflour, mixing until just combined. Pour in the cream and mix again until the dough is smooth.
Bake for 15โ€“20 minutes, or until set and lightly golden at the edges. For a crispier texture, bake for slightly longer. Allow to cool on the baking sheet for 15โ€“20 minutes, then transfer to a wire rack to cool completely.

To make the icing, dissolve the instant coffee in hot water and allow to cool slightly.
Beat the butter until creamy, then add the icing sugar and vanilla, mixing until smooth.
Gradually add the cooled coffee mixture and beat until light and fluffy. Add 1โ€“2 T cream to achieve the desired consistency. Once the cookies are completely cool, pipe or spread the coffee buttercream onto half of the cookies and sandwich with the remaining cookies.
