Creamy Rice Pudding with delicious seasonal cherries!
🍒🥣
What you'll need ~
500g cherries
100g caster sugar
100ml Pimm’s
1 bay leaf
1 orange
RICE PUDDING
200g rice
1L milk
2 heaped tablespoons caster sugar
1 vanilla pod
1 heaped tablespoon crème fraîche

Let's get baking ~
Wash and de-pip the cherries, then place in a pan with the caster sugar, Pimm’s and bay, then speed-peel in a couple of strips of orange peel. Cook on a medium heat for around 30 minutes, stirring regularly.
Tip the rice into a large wide non-stick casserole pan on a medium-low heat, pour over the milk, then stir in the golden caster sugar. Halve the vanilla pod and scrape out the seeds, adding both the seeds and pod to the pan. Leave to simmer gently for 30 minutes, or until tender and oozy, stirring regularly.
When the time’s up on the jam, use a potato masher to carefully mash the cherries on one side of the pan, then stir them back through the rest – this will give you a nice mixture of chunky and puréed. Remove and discard the bay leaf and orange peel, and switch off the heat.
Stir the crème fraîche through the rice pudding, then pour into glasses or bowls. Top with a good few tablespoons of the jam, then sprinkle with almond slices and enjoy!

A classic cake that will impress any holiday guest! 🍰 A Cream Sponge Cake.

What you'll need ~
225g butter (at room temperature), plus extra for greasing
225g caster sugar
1 teaspoon vanilla extract
4 large eggs
225g self-raising flour
1 teaspoon baking powder
1 splash of milk
FILLING
200ml double cream
1 vanilla pod
1½ tablespoons of icing sugar
250g fresh strawberries
3 tablespoons of strawberry jam

Let's get baking ~
Preheat the oven to 180ºC. Grease and line the bases of 2 round 20cm sandwich tins. Cube the butter, then cream together with the sugar in a large mixing bowl until pale and fluffy. Mix in the vanilla extract. Beat the eggs, then gradually mix into the creamed butter and sugar. Sift, then fold in the flour, baking powder and ¼ of a teaspoon of sea salt with a large metal spoon until just incorporated (don’t overmix). Stir in 1 splash of milk to loosen the batter, then evenly divide it between the 2 cake tins.
Bake the cakes in the oven for 22 to 25 minutes, or until golden and cooked through. To test, insert a skewer into the middle of a cake; it’s ready when the skewer comes out clean. Leave to cool in the tins for 5 minutes, then turn onto a wire rack to cool completely.
Once completely cool, pour the cream into a large bowl, scrape in the vanilla seeds and whisk until you have soft peaks.
Sift in icing sugar and gently fold through. Place one of the cakes on your chosen plate or cake stand and spread half the vanilla cream and jam, but not right to the edges, or it will spill later. Add the second cake on top and spread with the remaining cream and sliced strawberries.
