A fresh gut-loving salad to brighten your week 💚✨
Hydrating cucumber, fibre and protein-rich chickpeas, and a hit of fresh herbs to support digestion, reduce inflammation, and keep your gut feeling light, happy and satisfied.
Gut Loving Cucumber, Herb & Chickpea Salad - Serves 4 🥗
Ingredients 🍴
Salad:
4 Lebanese cucumbers, thinly sliced
2 cans chickpeas, rinsed and drained
½ red onion, thinly sliced
1 cup fresh parsley leaves
½ cup fresh dill
½ cup fresh mint leaves
Dressing:
4 tbsp tahini or ½ cup Greek yoghurt
4 tbsp lemon juice
2 tbsp olive oil
2 tsp honey or maple (optional)
1–2 garlic cloves, minced (optional)
Salt + black pepper
Water to thin as needed
Method:
- Place cucumber, chickpeas, red onion, parsley, dill and mint into a large bowl.
- In a separate small bowl, whisk together tahini/yoghurt, lemon juice, olive oil, honey/maple, garlic, salt and pepper. Add water slowly until the dressing is creamy and pourable.
- Pour dressing over salad and toss gently.
- Serve immediately, or chill for 20 minutes to let the flavours develop
So good to accompany meat dishes and is always hit when brought to shared lunches or dinners!
