This one is on repeat in my house at the moment!
A warm golden curry that takes 30 minutes, uses one pan, and genuinely makes your gut happy. Every single ingredient is in here for a reason - turmeric and black pepper work together to fight inflammation (the pepper increases turmeric absorption by up to 2000%, so don't skip it), ginger calms the gut lining, chickpeas feed your good bacteria, and coconut milk is so much gentler on digestion than dairy.
Add chicken or tofu if you want the extra protein, or keep it plant-based - either way it's delicious.
