Flourless Banana Pancakes 🍌
Fluffy, refined carb free, sugar free, 100% whole food, fibre and protein rich… that’s a YES! My 3 year old calls them yummy cakes and always asks for more and I think we all know kids that age are not easy to please!

Ingredients
~ 1 medium to large banana
~ 2 extra large or jumbo free range eggs
~ 1 tablespoon of chia seeds
~ a sprinkle of cinnamon, to your taste
~ extra virgin olive oil, to cook
~ yoghurt and berries of your choice, to serve
Method
1. Preheat your non toxic pan, I use stainless steel and you can see mine are well loved 🫶🏻, and once water pops and bubbles on it then remove from the heat for 5 and turn your pan down to low to medium heat (I go for about a 3-4 on my induction cook top)
2. In a blender combine all of your ingredients and whizz for about 2 minutes
3. Drizzle evoo in your pan and pour in small circles of pancake mix; don’t go too big or you’ll struggle to flip them
4. Give them 2 minutes and then flip them over and and they should be easy to flip and golden brown, and cook them on the other side for about the same
5. Serve them with yoghurt of your choice and I love to warm some frozen, organic blueberries (I get them from Woolies) which make a quick and easy compote and top with that
