Keto Pepperoni Cheese Roll-Ups – Quick Low-Carb Snack
These keto pizza cheese rolls are crispy on the edges, chewy in the middle, and packed with classic pizza flavor. Made with melted mozzarella slices, Italian seasoning, and pepperoni, they roll up into the easiest low-carb snack—perfect for dipping in keto marinara. Ingredients


12 slices mozzarella cheese
Pepperoni slices or mini pepperoni
Italian seasoning
Keto marinara sauce for dipping
Method

Preheat oven to 400°F.
Line a baking sheet with baking mat or parchment.
Lay mozzarella slices on sheet. Bake 6 minutes until edges start to brown.
Remove and cool slightly. Sprinkle with Italian seasoning and add pepperoni.
Roll up and serve with keto marinara sauce.

Best rolling: Don’t let cheese cool too long or it will harden—roll while still flexible.
Extra toppings: Add crushed red pepper flakes or a pinch of garlic powder.
Crispier rolls: Bake 1–2 minutes longer before rolling for more crunch.

Ingredients
For the turkey:
1.5 tbsp oil
1 lb ground turkey
1 large shallot, finely minced
1 inch fresh ginger, minced
2 garlic cloves, minced
1 tbsp soy sauce
1 tbsp fish sauce
2 tsp curry powder
1/4 tsp turmeric
Juice of 1.5 limes

For the peanut dressing:
1/2 cup peanut butter
Zest of 1 lime
Juice of 3 limes
1/2 inch fresh ginger, grated
2 tbsp soy sauce
1 tbsp sriracha
1 tbsp rice vinegar
1 tbsp maple syrup
2 tbsp warm water
1/2 tsp toasted sesame oil

For the salad assembly:
2 cups napa cabbage, shredded
2 cups romaine lettuce, chopped
1/2 cup carrots
1 cucumber
3 avocados, sliced
1/2 cup toasted coconut
1/2 cup basil
1/4 cup cashews

Instructions
Prep all vegetables and whisk together the peanut dressing until smooth. Toast the coconut and set aside.

Heat oil in a skillet over medium-high heat and cook the ground turkey until browned.

Add shallot, ginger, and garlic, then stir in soy sauce, fish sauce, curry powder, turmeric, and lime juice. Cook until caramelized.
