Ingredients
For the turkey:
1.5 tbsp oil
1 lb ground turkey
1 large shallot, finely minced
1 inch fresh ginger, minced
2 garlic cloves, minced
1 tbsp soy sauce
1 tbsp fish sauce
2 tsp curry powder
1/4 tsp turmeric
Juice of 1.5 limes
For the peanut dressing:
1/2 cup peanut butter
Zest of 1 lime
Juice of 3 limes
1/2 inch fresh ginger, grated
2 tbsp soy sauce
1 tbsp sriracha
1 tbsp rice vinegar
1 tbsp maple syrup
2 tbsp warm water
1/2 tsp toasted sesame oil
For the salad assembly:
2 cups napa cabbage, shredded
2 cups romaine lettuce, chopped
1/2 cup carrots
1 cucumber
3 avocados, sliced
1/2 cup toasted coconut
1/2 cup basil
1/4 cup cashews
Instructions
Prep all vegetables and whisk together the peanut dressing until smooth. Toast the coconut and set aside.
Heat oil in a skillet over medium-high heat and cook the ground turkey until browned.
Add shallot, ginger, and garlic, then stir in soy sauce, fish sauce, curry powder, turmeric, and lime juice. Cook until caramelized.
