obsessed with this cozy lasagna soup ๐Ÿฅฃ

1 tbsp olive oil
1 lb ground beef
1 small onion, diced
3 garlic cloves, minced
1 tsp Italian seasoning
1 tsp dried basil
2 tbsp tomato paste
1 jar marinara sauce
4 cups chicken or beef broth
8โ€“10 lasagna noodles, broken into pieces
1 cup whipped cottage cheese
1/2 cup shredded mozzarella
1/4 cup parmesan
Salt & pepper to taste

bring a medium pot of water to boil and cook lasagna noodles until tender (about 10โ€“12 minutes)
heat olive oil in a large pot.
add beef and cook until browned then drain extra fat.
add onion and garlic and sautรฉ until softened.
stir in Italian seasoning + basil, pour in marinara and broth then bring to a boil.
lower to a simmer for a few minutes before turning off the heat and adding spinach and cooked noodles.
in a small bowl, mix whipped cottage cheese, mozzarella, and parmesan.
spoon soup into bowls and top with a dollop of the cheese mixture.
