Feta and Charred Pepper Bulgar Wheat Salad.

2 bell Peppers - cut into large wedges, cover with a drizzle of olive oil and season with salt and pepper 200°C 18 mins.

Bulgur Wheat - 120g made as per packet instructions.

Baby Plum Tomatoes - 125g halved.

Rocket - 40g roughly chop.

Lemon - zest whole lemon, cut in half, juice one half and cut the other half into wedges.

Honey Harissa Dressing - add lemon juice, 50g harissa paste, and 15g honey to a bowl and mix.

Add tomatoes, rocket, 25g of sun-dried tomato puree, a drizzle of olive oil, 150g of crumbled feta, and bulgur wheat to a large bowl and mix well.

Serve the bulgur wheat salad into two bowls top with the pepper and honey harissa dressing and a side of lemon wedge.
