Fun little tid bit I came across while researching probiotics and fermentation for my upcoming talk with Got Vitality. Research published in the June 2018 Journal of microbiology and biotechnology showed positive benefits in warding off both H1N1 seasonal and avian flu with Lactobacillus plantarum & Leuconostoc Mesenteroides, both commonly found in both sauerkraut and kimchi.

Arnica #1 remedy in my first aid kit.
In continuing with my posts on how Naturopathic Medicine and Acupuncture can help with injury and pain I thought I would share a handy tip for your first aid kit. I can't tell you how much of this we go through in my family. Between a 3 yo, 6.5 yo and two mammas who are staying active and trying to keep up with them this is often the first remedy I reach for. I am not sure if it's because we are clumsier than the rest of the world or if we are just driven to climb, jump and physically explore the natural world around us, but I am surrounded by scrapes, bumps and bruises. I started carrying it around with me in my soccer bag as a kid and now I make sure it's in my son's soccer bag as well.

Arnica Montana is an alpine daisy that grows in much of western Europe and is a must for bruises and trauma. You can find it as a cream for topical use on unbroken skin and it is very handy as a homeopathic 30c dose for any type of injury with bruising pain and swelling including after surgery, and in head injuries. Personally I can attest to how affective the remedy was for me in the first 2-3 days post labor when all of the bruising, soreness kicked in and the stitches were healing.

Chicken bonebroth recipe continued...
Turn the heat on to medium hot, let it slowly heat up and keep at a simmer. The goal is to simmer the bones, avoid a heavy boil, which I found destroyed the collagen in my soups. This part takes a lot of monitoring or a slow cooker. You can leave the pot covered or uncovered. I find it hard to monitor the heat when it is covered, but then I have to regularly add more (warm) water. A glass lid helps immensely. Keep the water level the same throughout cooking.
A foam will rise as the soup cooks, skim and discard. There are recipes that use it, if you want to research that.
When the soup has a great flavor and a rich color, it’s ready. I cook my broths for 12-24 hours depending on what is happening in my life at the time. Sometimes you can’t watch a pot for so long; I haven’t noticed a big difference in quality ... yet. Some of the bones should be brittle and crumble if pressed. I find that if I have larger bones and/or a lot of bones they may not.
Strain out the bones using a mesh colander or other strainer while pouring the broth into a large bowl or pot and let it cool to room temp (or close) before pouring into jars and sealing. Put the jars in the refrigerator and let cool overnight, or until the fat has separated and the collagen jells. You can skim off the fat and use for cooking or discard. Then freeze what you want to or use it within the week.
Compost all of those bones and skim foam and fat and enjoy a nice cupp’a broth. And do a happy dance if it jells. Dancing is the last required ingredient!

By popular demand, this is how we make bonebroth in our house.

Chicken Bone Broth Recipe Part 1

Makes about 4 quarts

Ingredients

Chicken bones, enough to halfway fill a large stock pot or mostly fill a crock pot.
1/2 c white wine or apple cider vinegar

Water (approx 4-6c)

Tools

A large (10L) stockpot and time to babysit it ...or a large slow cooker
4+ Glass jars for storage (if you are freezing you need to leave a lot of room in the jar for expansion, thus you need more jars)

Mesh colander/sieve (I prefer the ones that stretch over the sink with extendable arms so it is stable under the weight of the bones. Ikea has a good one.) A large bowl or second pot

This process is so simple and yet ... I’ve screwed it up a lot too. But even an imperfect broth is super tasty; it’s just the collagen that suffers if it gets too hot. And sometimes it’s hard to get a consistent temperature on your cooktop. Which is to say, it’s ok if it takes a few pots to master this. I still do a happy dance when I pull out my chilled broth and I can turn it upside down and have it not move because it has jelled perfectly. .... I save all of the bones of all of the chicken my family eats and when I’m running low on freezer space, it’s time for broth. I try to use the broth within the week or freeze it, with a lot of extra room in the jar. Broth is so good for cooking with and soups, but is also just great on its own. Since we just found out half our family can’t eat eggs, we’re using broth as a protein-meets-healthy-cupp’a morning option. All that collagen and mineral concentration is great for protecting bones and joints, providing a good protective start in your gut for the day, and of course supporting skin and hair health. Add some tumeric and/or lemon for additional flavor and immune support!

How to make it

Drop the bones in a large stockpot, cover with water and add the wine or vinegar. Let them sit for at least half an hour to let the wine/vinegar do its magic with the minerals. If the bones are frozen I put the burner on very low heat and to thaw and then let them sit for and hour or so.

My most definitive moment with acupuncture, the moment that led me to my career, was when I was a 16 y.o. very serious soccer player and found myself with a partially torn MCL and a fractured femur. (I still refuse to back down from a contest...) My mom had introduced me to acupuncture before for more chronic aches and pains as well as colds, digestive issues and stress, but nothing quite this acute before. As she was also an EMT, I trusted her in taking me directly for acupuncture after such an injury. I was in so much pain, and anxious about what this meant for the rest of the soccer season. What I remember most from that visit was feeling the pain fade away and falling asleep on the table. With regular treatments for 6 weeks I was off the crutches and right back to playing again. The typical recovery period for a femur fracture is at minimum 12 weeks. I am no less impressed when I help my own patients find the power in acupuncture to support their own healing from major events. Acupuncture has an amazing ability to reduce pain, inflammation and restore function even after the initial visit. It's a tool I recomend for all athletes on a regular basis as well as anyone that is struggling with injury.
