So simple! All I did was take parchment paper and sprinkle shredded cheddar cheese (about 1/4 a cup) microwave for 1 minute (cooking time will depend on microwave) let it cool....and DONE enjoy!!!

PIZZA BURGER WITH PEPPERONI AND MOZARELLA BUNS FOR THE WIN!!! 🙌

Recipe for the buns:
1/4 cup shredded mozarella
2 tbsp grated Parmesan
2 pepperonis .
Instructions:
Put mozarella, pepperonis, & Parmesan on parchment paper in 2 piles that are each the size of the meat you’re going to put on the sandwich. Salt them and broil until the edges turn light brown. Let cool until they harden, and use as buns for any kind of sandwich you want or simply eat them as chips! 😋 You can see the second picture in this post for a better idea of how the piles should look.
Macros: (for buns only)
Calories: 146
Fat: 10g
Protein: 14g
Net carbs: 1g
Fiber: 0g
Notes: for the pizza sauce I just used an organic marinara that had like 5 net carbs per half cup. And since I only used 2 tbsp it didn’t really add many carbs at all. .
Also, the meat I used is from Wendy’s because their burgers are my favorite just for aesthetic purposes lol. But for this they messed up gave me mini patties so these are actually pretty small compared to the patties you get on a baconator lol. If you make your own burgers, you might need to double the ingredients for the buns to make them bigger.

🧀Grab 1/3-1/2 cup of cheese (I used a mexican blend)
🍳Shape into a circle and cook on high for 2-4 min until the cheese is all melted. 🥚Crack 2 large eggs on top, season with salt/pepper/paprika, and cover for about 3-4 min (or until the eggs are cooked to your liking, I like mine really runny). You won’t need any oil on the pan because of the 🧀 so it will be really easy to move from the pan to the plate. 🥓Top with your faves - I used avocado, pico de gallo, tapatio and bacon on the side. Light and pillowy LEMON RICOTTA BLUEBERRY PANCAKES 🍋🥞🥰🙌🏻. Couldn't have made 'em any fluffier if I tried! These cakes come together in 15 minutes fast and are bursting with fresh blueberries + zesty lemon flavor. They're also grain-free, gluten-free, dairy-free, and lower in sugar.

LEMON RICOTTA BLUEBERRY PANCAKES (serves 1-2). 1 egg + 2 egg whites
1/2 cup ricotta cheese (dairy-free or regular)
3 tablespoons coconut flour (no substitutions)
1/4 teaspoon baking soda
2 tablespoons milk (almond, cashew, dairy)
1.5 teaspoons vanilla extract
1/2 tablespoon lemon zest
1 tablespoons granulated sweetener
1/2 cup blueberries
Mix all ingredients except blueberries in a blender or food processor, until smooth. (Alternatively, you can mix ingredients by hand in a medium-sized bowl). Fold in blueberries. Heat a medium-sized pan for 1-2 minutes over medium-high heat; grease with butter (this creates the BEST flavor) and pour 2-3 tablespoons of batter into the pan. Cook the pancakes until golden brown and fluffy, about 3-4 minutes. Repeat with remaining batter. Top with butter + maple syrup!

Spinach and artichoke chicken bake Would you try this??? 🙋🏻‍♀️Credit:
Step 1: season chicken to liking
Step 2: coat top of chicken with spinach and artichoke dip. (I used premade from Sams. It’s delicious. I shared it in tonight’s stories)
Step 3: top with bacon crumbles
Step 4: top with thinly sliced mozzarella cheese
Step 5: bake at 400° until internal temp reaches 165°. (Time will vary based off thickness of chicken)
Step 6: enjoy 😉

1. Is salmon, spicy-garlic broccolini, and basil-sage fettuccine...fast, easy and cheesy💘🧀☺️ wild king salmon seasoned with sea salt and black pepper, then seared in avocado oil 3 mins skin side up, then 3-4 mins skin side down •• grilled broccolini seasoned with lemon juice, garlic, olive oil, red pepper, parm 🌶🥦 •• cappellos almond flour fettuccine tossed with basil, sage, olive oil, and parm 🌿.

2 Simple kale caesar salad. can’t get enough of this combo! Only try it if you’re prepared to become an addict 😆👉🏻 baby kale 🌿 tossed in caesar dressing •• seared crispy salmon: season salmon fillet with sea salt and black pepper. In a non-stick pan, heat 1 tsp. avocado oil for one minute. Spicy Shrimp Tacos with slaw, over some lowcarb spicy jalapeño flatbreads.

Here’s how I made it:
1. Used spicy jalapeño cauliflower flatbreads as the base. These are super low carb and a solid vessel for the goods! I use the pan to heat them up on both sides. You can always follow directions as is.
2. For the shrimp, I pat the raw wild shrimp dry with a paper towel then tossed them with some pink Himalayan salt, ground pepper, smoked paprika, smoked chili, and garlic powder. You can get creative and use whatever spices you want. Cook for about a minute on each side in some avocado or olive oil. Don’t overcook as it becomes rubbery.
3. For the slaw, I used some shredded red and white cabbage, lettuce, thinly sliced carrots, threw them in a bowl, tossed in some finely diced pickles, added some avocado mayo, sea salt, pepper, and lime juice. You could use lemon or vinegar too if you prefer. Give it a good mix. Taste, and add whatever more of anything you like to your desire.
Pile them high on the flatbreads, add some sliced lime wedges, and you’re in business!
What are you guys upto this weekend? I’m heading out to do some shopping, get the car cleaned, hopefully find some oysters to shuck at home tonight, and get a longer run in later today. I finally signed up for a full marathon later in October, so it’s time to get going!!
