People in these communities are more likely to experience complications due to barriers in access to healthcare, healthy foods, and resources.

Recipe Spotlight: Southern-Style Collard Greens (Diabetes-Friendly)
This classic dish is packed with flavor and nutrients but keeps the carbs and sodium in check. Perfect for a healthy plate with that Southern comfort you love!
Ingredients:
1 lb fresh collard greens, washed and chopped
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 smoked turkey wing or drumstick (lower sodium option)
4 cups low-sodium chicken broth
1 tsp apple cider vinegar
1/2 tsp smoked paprika
1/4 tsp red pepper flakes (optional for a little kick)
Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant and softened (about 2-3 minutes).
Add the smoked turkey and cook for another 2 minutes to release its flavor.
Pour in the chicken broth and bring to a boil.
Stir in the collard greens, smoked paprika, and red pepper flakes. Reduce heat, cover, and simmer for about 45 minutes, stirring occasionally.
Add apple cider vinegar and adjust seasoning with salt and pepper before serving.
