Chocolate Silk Pie ๐๐๐
Here's the magical shift to make a chocolate silk pie into something that could arguably be good for you, as long as you're not allergic to soy. Get excited because you're going to purchase one of those graham cracker crumb pie shells from the supermarket aisle you usually woefully pass by.
Silken tofu provides the medium for the magic to transpire. The beauty of silken tofu is that it creates a creamy base for your pudding without cream or eggs.
Find your best and favorite large dark chocolate bar or if using chips, I use the whole bag. I use a splash of vanilla extract or almond extract or even rum extract, 1/4 cup of cocoa powder, to make it sweet you can use a little honey, maple syrup, or any other natural sweetener. It's entirely up to you to keep your pie as healthy or not as you'd like it to be.

Melt your hard chocolate in a double boiler or microwave.
Toss the package of silken tofu into the blender, pour the chocolate in there, put a little extract in, cocoa powder, whatever sweetener you're choosing and blend. Pour into your graham cracker shell and refrigerate for a couple of hours. You can dress it with fresh berries, redi-whip has a no sugar version & a coconut version & Trader Joe's has their own versions as well.
