Well, it’s nearly Valentine’s Day, and just in case you’re wondering what to make for dessert, I thought I’d help you out.

This, ladies and gentlemen is - dare I say- a silken tofu chocolate mousse. Wait! Come back! I promise you won’t taste any tofu!!

I actually tested it out on my family along with a traditional mousse- you know the one, with all the eggs, sugar and cream and they (well most of them) liked this better. I’ll tell you why - because it is INSANELY chocolatey. I mean REALLY. What’s why it’s so good. Not tofuy at all. Promise. It’s enchantingly chocolatey.
And easy to make.

Here’s the recipe:

1, 16 oz package of SILKEN tofu
1 cup best quality chocolate chips
1/4 cup good quality cocoa powder
1/3 - 1/2 cup maple syrup (start with 1/3 cup and add more if you need it)
1 teaspoon vanilla extract
1/4 teaspoons rose water (optional but lovely)
Pinch of salt

Method:

1. Melt the chocolate chips - I do this carefully in the microwave - go slow and don’t let the chocolate burn. YOU want them JUST melted.

2. Place the silken tofu in a strainer and strain out all the excess liquid. You can press it with a spatula to get rid of the liquid.

3. Place the tofu, cocoa powder, maple syrup, vanilla extract, rose water if using and salt into a vitamix. BLITZ.

4. Pour in the melted chocolate and blitz again. TASTE. Add more sweetener if desired. That’s it!
5. Pour into a pretty glass. Chill for a couple of hours then enjoy!!!

If I had to live on one meal- this might be it. Deliciously nourishing and super duper yummy, pare it with a slice of toasted sourdough and a glass of Chianti and life will be good!

In my world of Enchanted Living it’s all about the simple becoming beautiful. So often we have what we need in front of us, but we’re too busy longing for something else and we miss it! This soup sums that up. It’s ordinary everyday ingredients, but when combined with a little bit intention they become magical 💫

Here’s the recipe:
2 tablespoons olive oil
1 shallot or small onion, diced
2 sticks celery diced
1 large or 2 small carrots, peeled and diced
4 cloves garlic, smashed
1 cup butternut squash- cubed (you could use sweet potato)
1, 15 oz can of cannellini beans, drained and rinsed
1 tablespoon tomato paste
Salt and pepper to taste
2 teaspoons Herbs de Provence or your favorite dried herb blend
2 teaspoons good quality balsamic vinegar
4 cups vegetable stock
1 box baby spinach or baby kale
Fresh parsley
Parmesan or plant based Parmesan for serving

Method:
1. On medium heat sauté the onion, celery, and carrots in the olive oil until soft. Sprinkle over salt, pepper, and dried herbs. Add the garlic , stir well and cook for another 2-3 minutes.

2. Add the beans, butternut squash, and tomato paste, stir well. Pour in the stock, add the balsamic vinegar. Bring to a boil, turn down to a simmer and partially cover the pot. Simmer until all the veggies are cooked through.

3. Stir in the baby spinach or baby kale, it will cook in the heat of the soup. Taste and add more salt and/or pepper if desired. Sometimes it’s nice to add a squeeze of lemon 🍋 but taste first - you do it want it too acidic. Sprinkle with fresh parsley and stir well. Smell the stand take a breath!!

4. To serve, sprinkle with regular or plant based Parmesan and enjoy. 😊

I’m learning new fun ways to live with the cold and snow. Yesterday I took myself off to and got lost in a jungle of luscious green, beautiful orchids and enchanting plant glory. It was like stepping out of a snowy white world in one of vibrancy and delight!

Here are a few photos and then my haul that I brought home! Turns out it is financially dangerous to walk into a plant world in winter 🫢.

Filling the house (actually at this point cramming the house) with plants and color is so joyful and such a promise that Spring will indeed come again one day! 🌸🌸🌸

Well, I didn’t exactly escape the snow but I am living the life in beautiful Lenox, MA for a few days. This stunning wellness retreat is such a wonderful experience and is SO deeply appreciated!

It’s an invitation and reminder that taking a break is not only delightful but essential! Two hours after arriving I was snoozing away on a lounger in the spa - in the middle of the afternoon. I ask you - when is the last time you lay down in the middle of the afternoon and slept?? For me it was when I had Covid! Perhaps it’s not always practical but I have a new appreciation for a mid afternoon snooze!

It’s amazing how quickly the body responds to care. I try to live mindfully and in particular to notice and delight in all the little beautiful moments in life that could so easily be missed. But in this world, hurtling along at a million miles a minute, even with the best intentions we can get swept up in the chaos.

This has been a reminder of the power of breath, of resetting, of connecting to mind, body and soul 🙏🙏🙏

A very comfy bed, deliciously nourishing food, delightful and knowledgeable staff and most of all being off the clock. What a treat 🙏💚🙏

If September isn’t the most enchanting month I don’t know what is. There’s a cool (ish) breeze, whitecaps on the river, and nature is taking over. A slight turning of the leaves 🍁 and the light is different.

It lifts the spirits and promises all sorts of lovely things like apple cake, lots of tea and cozy blankets- I’m all in!

I’m forging ahead with the Autumn garden - 🪏 the snap pea seedlings are looking very adorable as are the kale and beet crop - fingers crossed they don’t all get eaten by rabbits 🐇

Happy Tuesday snippets :

Meet my French oven - blue, beautiful and always ready for a little culinary magic! It has a personality- and as far as I can tell it’s got 2 temperature settings -scorch and tepid!!! Somehow everything comes out perfectly 🤩

The sink! Yes a functional spot but such a fun one. The perfect place to transform the mundane into magical ✨

The bookcase - it tells visitors who you are! I like to think of books wrapped up in the bookcase as treasures of the home. Reading after all is one of the greatest pleasures 📕📗📘📙📖📚

We’re so fortunate to have a bustling farmers market every weekend throughout the year - rain or shine. These farmers are so committed, it’s either blazing hot or frigidly cold but they’re always there! There’s something very special about chatting with the people who grow and harvest your food. They get to know what you like and occasionally put a lovely little something aside especially for you 🌿💚

As you know I try hard everyday to find enchantment and beauty no matter what is going on or where I am - but on a day like today it’s not so very hard!!!
