Well, it’s nearly Valentine’s Day, and just in case you’re wondering what to make for dessert, I thought I’d help you out.
This, ladies and gentlemen is - dare I say- a silken tofu chocolate mousse. Wait! Come back! I promise you won’t taste any tofu!!
I actually tested it out on my family along with a traditional mousse- you know the one, with all the eggs, sugar and cream and they (well most of them) liked this better. I’ll tell you why - because it is INSANELY chocolatey. I mean REALLY. What’s why it’s so good. Not tofuy at all. Promise. It’s enchantingly chocolatey.
And easy to make.
Here’s the recipe:
1, 16 oz package of SILKEN tofu
1 cup best quality chocolate chips
1/4 cup good quality cocoa powder
1/3 - 1/2 cup maple syrup (start with 1/3 cup and add more if you need it)
1 teaspoon vanilla extract
1/4 teaspoons rose water (optional but lovely)
Pinch of salt
Method:
1. Melt the chocolate chips - I do this carefully in the microwave - go slow and don’t let the chocolate burn. YOU want them JUST melted.
2. Place the silken tofu in a strainer and strain out all the excess liquid. You can press it with a spatula to get rid of the liquid.
3. Place the tofu, cocoa powder, maple syrup, vanilla extract, rose water if using and salt into a vitamix. BLITZ.
4. Pour in the melted chocolate and blitz again. TASTE. Add more sweetener if desired. That’s it!
5. Pour into a pretty glass. Chill for a couple of hours then enjoy!!!
