Eggs: 6 large egg yolks

Sugar: 1 cup sugar

Dairy: 1 cup heavy whipping cream & 2 cups whole milk

Flavor: ½ tsp cinnamon & ¼ tsp vanilla extract

🥣 DIRECTIONS:

Cream Yolks: In a bowl, whisk together the egg yolks and sugar until the mixture is light and creamy.

Heat Dairy: In a saucepan over medium heat, combine the heavy cream, milk, and cinnamon. Stir and heat just until it reaches a simmer.

Temper the Eggs (Crucial Step!): This is the secret to smooth eggnog! Gradually add the hot milk mixture to the egg bowl one spoonful at a time, whisking constantly after every spoonful. Do this until all the milk is added. (If you pour it all at once, you’ll end up with scrambled eggs!)

Thicken: Pour the mixture back into the saucepan. Heat on medium-low and whisk until slightly thickened.

Flavor & Chill: Remove from heat and stir in the vanilla extract. Transfer to a container and refrigerate until chilled and thickened.

Serve: Pour into mugs and top with fresh whipped cream and a sprinkle of cinnamon!

Don't Rush: Take your time adding the hot milk to the eggs. This process (called tempering) ensures a silky smooth drink.
