High-Protein Tuna & Chickpea Salad Sandwich 😋

Ingredients (Serves 4)
• 1/3 cup mayonnaise
• 2 tablespoons chopped fresh chives
• 1 tablespoon Sriracha
• 1 1/2 teaspoons grated garlic
• 1 1/2 teaspoons lemon juice
• 1/4 teaspoon salt
• 1/8 teaspoon ground pepper
• 1 (15.5-ounce) can no-salt-added chickpeas, drained
• 2 (5-ounce) cans solid white tuna in water, drained
• 1/4 cup finely chopped red onion
• 8 slices whole-wheat bread
• 4 leaves green-leaf lettuce

Directions
1. Whisk mayonnaise, chives, Sriracha, garlic, lemon juice, salt and pepper together in a small bowl.
2. Place chickpeas in a medium bowl. Using a fork, press and roughly smash some of the chickpeas (it’s OK if some remain whole). Add tuna to the chickpeas; stir to combine, using the fork to flake the tuna. Add the mayonnaise mixture and onion; stir until well combined.
3. Spread the mixture evenly over 4 bread slices (about 1/2 cup each). Top each with 1 lettuce leaf and top with the remaining bread slices.

Sweet Potato Pie Bars 🍠

Mash one cooked sweet potato and mix with 1 cup of flour, ½ cup of brown sugar, and 1 teaspoon of cinnamon. Stir in a beaten egg and a splash of vanilla extract. Press the mixture into a lined baking pan, and bake at 350°F (175°C) for 20-25 minutes until set. Cut into bars and serve as a satisfying twist on traditional pie.
