This Saturday I will bring Gluten free and vegan almond cookies to Fort Greene, some call them almond croissants. I will also bring sweet rolls, seeded rolls, focaccia rolls, loaves and mixes. However I will bring only a few loaves as I want to focus on the rolls. Message me if you want to order or reserve any items for Saturday. Hope to see you there.

I’m building something special… and I don’t want to guess—I want to get it right for you.

Every loaf, every roll, every pastry I bring to the market comes from a simple idea:

This morning didn’t go as planned… and sometimes the oven (and life) has its own ideas.

I won’t be at Fort Greene this morning due to unforeseen circumstances, but I’ll be back in action tonight at the museum in Brooklyn from 5–9:30pm.

Come by the Brooklyn Pop-Up Market at the Beaux-Arts Court (3rd Floor), where you’ll find one-of-a-kind, handmade goods from artists and vendors across Brooklyn—books, artwork, jewelry, fashion, vinyl records, and of course… food.

I’ll be there with my fresh gluten-free loaves, rolls, and a few pastries I’ve been working on 👀

Same passion, same bread… just a different stage tonight.

Today felt like a little pastry experiment turned into something I might not be able to stop making 😄

I started with my cookie dough, rolled it into a ball, gently flattened it, then came the fun part… I pressed the back of an ice cream scoop right into the center to create a perfect little nest. Into that went a smaller ball of almond frangipane, tucked in like a hidden treasure.

Into the oven it went… 25 minutes later… golden edges, soft center, and that rich almond aroma doing its thing. Tomorrow I’ll finish them with a light dusting of powdered sugar or maybe a simple icing drizzle… we’ll see what mood I wake up in.

These are coming with me to the market tomorrow. I’ll be baking a few dozen more later today, so if you want me to put a few aside for you… just message me before they disappear.

Let’s just say… I think this one might become a regular 👀
