Basil Pesto Recipe🍃⁠

Ingeedients📑⁠
2 cups packed fresh basil leaves⁠
2 cloves garlic⁠
2 tsp of lemon juice⁠
1/4 cup pine nuts⁠
2/3 cup extra-virgin olive oil, divided⁠
Salt and freshly ground black pepper, to taste⁠
1/2 cup freshly grated Parmesan or Pecorino cheese⁠

Instructions🔪⁠
In a food processor (or blender), puree all of the ingredients (except the olive oil).
Blend for 15 seconds after adding half of the olive oil.

Blend for another 15 seconds or until smooth, adding the remaining olive oil if necessary.

BURRATA LOW-CARB PASTA 🍝⁠
Recipe by

1/3 large red onion and 4 garlic cloves should be finely diced and put in a pan with 1 tablespoon olive oil. Cook for a few minutes before seasoning with a touch of salt, pepper, 1 to 2 tablespoons dried oregano, and 1 to 2 tablespoons dry thyme. Mix thoroughly.
Add around 10 or 12 finely chopped roasted tomatoes to the pan, followed by a 3/4 can of tomato sauce. After that, add 1 tablespoon balsamic vinegar and 1 teaspoon paprika.
Mix thoroughly, then set aside to reduce - the sauce will naturally become sweeter.
Bring a big pot of salted water to a boil, then add two kaizenfoodco pasta servings and simmer for about 6 minutes. Save about 1/2 cup of the pasta water once it's done; you'll need it later. ⁠
Toss the drained pasta with approximately 1/2 cup of pasta water and roughly 1/3 to 1/2 cup of freshly grated Parmesan cheese in a saucepan.
Open up a gorgeous burrata ball, add some finely shredded fresh basil, and top with olive oil, fresh ground pepper, and red chili flakes if preferred.

The best strawberry green salad.

For the Salad:
1/2 of a finely diced English cucumber — or any
1/4 cup of finely diced chives — you can use green onion too
one bunch of finely sliced baby spinach — about 3-4 cups total
1 cup of finely diced strawberries — I used 10 strawberries
6-7 walnuts are optional

The Dressing:
2-3 tablespoons olive oil
1 tablespoon white balsamic vinegar — any acidity works
1 tablespoon honey dijon mustard
salt and pepper to taste

Mexican Street Corn ( Elote )
Recipe by
Ingredient
4 ears of grilled corn on a cob— husks removed or you can boil it as well
1 tablespoon avocado oil for the corn — or any oil
4 wooden skewers are optional
1/3 cup mayo — any you like
1/2-1 teaspoons chipotle chilli pepper or powder
juice of half a lime
1/2 cup finely grated Cotija cheese — or Parmesan if you can’t find Cotija cheese
Tajín seasoning for garnish
fresh and finely chopped cilantro or parsley for garnish
Please note: She grilled her corn but it can also be boiled as well. If you cannot find Cotija cheese you are more than welcome to use Parmesan instead but make sure its good quality Parmigiano Reggiano. If you don’t like cilantro feel free to use parsley instead as this recipe is so versatile and can be made accordingly to taste.

Pickle Chips with Cheesy Ranch Sauce

RECIPE:
1. Drain 12 pickle chips on a paper towel.
2. Place some freshly shredded colby jack cheese in a muffin pan.
3. Add a pickle to each one.
4. Sprinkle on some ranch seasoning.
5. Top with more colby jack cheese.
6. Bake at 375° for 10 minutes.

Take 1/3-1/2 cup cheese (I used a Mexican blend) and set aside. Form into a circle and cook for 2-4 minutes on high, or until the cheese is completely melted. 🥚 2 large eggs, cracked on top, seasoned with salt, pepper, and paprika, then covered for 3-4 minutes (or until the eggs are cooked to your liking, I like mine really runny). Because you won't need any oil on the pan, it'll be a breeze to transfer from the pan to the plate. 🥓 Serve with your favourite toppings, such as avocado, pico de gallo, tapatio, and bacon on the side.

Low Carb Buckeyes by

You'll need the following ingredients for this recipe:
12 cup melted butter
12 cup peanut butter (creamy)
12 cup monk fruit sweetener powder (allulose or erythritol will work too)
1 teaspoon extract de vanille
2 cups milk chocolate chips (sugar-free) (I prefer Lilly's)

In a medium-sized mixing basin, combine the melted butter, peanut butter, powdered sweetener, and vanilla. Stir everything together thoroughly until it's all combined.

Divide the dough into 30 evenly sized balls using a cookie scoop. Freeze for about 30 minutes on a parchment-lined baking sheet.

In a double-broiler, melt the chocolate chips until smooth.

Remove the balls from the freezer and dip them almost entirely in the chocolate, leaving a small amount of peanut butter visible on top. To keep my hands clean, I like to use a toothpick for this stage.

Refrigerate the balls until the chocolate has hardened, then eat! I recommend storing these in the refrigerator in an airtight container until ready to consume.
