Here’s the deal.  I think most of us women have a significant amount of creative energy that needs an outlet. However, many of us work in technical male-dominated fields, which leaves us with little room for our creative feminine energy.  Is this ideal?  I mean, I would love it if girls truly ran the world, were the majority in STEM fields, and could freely exist in those fields without having to betray their feminine energy to some extent.  But, that’s not where the world is at today, and probably won't be the case for any of us in the near future.⁠⁠
But what I felt for myself and I saw in many of the women I worked and studied with at MIT, is that even if they enjoyed, and excelled in their courses, internships, or future careers, there was still something that was missing.  ⁠⁠
Intuitive cooking was able to help fill that hole for me.  ⁠⁠
Moreover, as busy successful women need to be pragmatic with the ways we pursue creativity.  There are only so many hours in the day, and ultimately, intuitive cooking allowed me to pursue creativity while still being productive, and meet one of my most basic human needs, for nourishment.⁠⁠
What I love about intuitive cooking is that I can cook for me. I don’t have to compete with anyone. There are no winners or losers, you really can’t fail. I promise it will be edible 99.9% of the time.  I can only think of one meal I have prepared in the last five years that probably should have been categorized as inedible (we still ate it).  It involved sardines that had been in the freezer for nearly a year.  A little food waste there might not have been the worst thing ever.  ⁠⁠
Intuitive cooking is one of the great joys of my life. It is my passion to share this skill with women who feel a need to express their inner creativity.  ⁠ ⁠

When I was first learning about nutrition, It was a long time before I was ready to seek professional help.  
I went so far as to go back to school to study nutrition at the , so I could truly do it all myself and be my own best advocate.  
I am so thankful for the education I received at the NTA, as it led me to have a level of understanding of my own body, and of the women I work with, that has been truly liberating.  
Ultimately, when it came to my struggle with endogenous oxalate production, I had to seek outside help.  I am so thankful that I did, as I was able to make more progress on my health in 3 months than I had in the year previously.

Good Morning Ladies!
I think it’s time for a proper introduction around here, so that’s what I’m going to do today!
I’m a wife to my darling husband, Marco, who I met my freshman fall at MIT and have been madly in love with ever since, and mamma to one 2.5-year-old (for now 😉), who’s name is also Marco (or baby, or cookie).  
In July 2015, I was born again, and my savior Jesus Christ has been the Lord of my life since then! I am so thankful for His amazing and irresistible grace. (Ephesians 2:1-10)
I studied Environmental Engineering at MIT 🤓, am a crazy knitting grandma at heart, love to drink herbal tea, and listen to Harry Potter audiobooks. I am always in the kitchen, and put cilantro on everything!
I became a Functional Nutritional Therapy Practitioner through the last year to fulfill a calling to help women who wish to grow healthy families be free from pain and full of vital energy to enjoy their time with their babies and small children while pursuing their God-given callings.
I currently live in Phoenix, AZ, where I was born, but I grew up in Chicago and will spend hours telling anyone who will listen why Chicago is the most beautiful city in the world.  
I traded skyscrapers for mountains, with no regrets.  I will also spend hours telling anyone who will listen why Arizona is the most beautiful state in the country.
I am so thankful the Lord brought our family to Phoenix where we can go for daily morning hikes in the nature preserve behind our home, spend the weekends with our church family, out camping or off-roading in our Subaru Crosstrek, and my 2-year-old doesn’t need to learn what mittens are!

I recently met with my nutritionist, because I just haven’t been feeling my best lately, mostly due to fatigue. (Even as an FNTP, sometimes you need to hear things from someone else to make the changes you know you need to). He told me one big thing holding me back was that I wasn’t eating ORGAN MEATS!

Thus came the inspiration for my May Series: Mastering Organ Meats

“Almost all traditional cultures prize organ meats for their ability to build reserves of strength and vitality. Organ meats are extremely rich in fat-soluble vitamins A and, as well as essential fatty acids… and the whole gamut of macro and trace minerals. Wild animals eat the organs of their kill first, thus showing wisdom superior to our own. The first solid food native African Mothers give to their babies is raw liver, which they thoughtfully chew for them.” Sally Fallon, Nourishing Traditions

I never ate organ meats growing up (except for some pate on a trip to France, which my mom was apparently shocked that I liked). I think this is common for most Americans. As a result, I struggle with all things cooking and organ meats. They smell the flavor, the texture. (All I can think of is dog food 🐶)

This is a start contrast to my husband who grew in Ecuador, regularly ate organ meats, and told me that liver is fancy.

It is a true desire in my heart to deeply enjoy eating organ meats. I’m just not there yet.

In this series, I will be sharing different recipes for both hiding organ meats as well as letting them shine on their own. I will also give ideas on where to buy organs meats in Phoenix and nationally.
