💪🏼HEALTHY HOMEMADE GUMMIES

These gummies are proof that simple can be delicious! (AD) Made with just two ingredients, they’re naturally gluten-free, paleo-friendly, and contain no added sugar—just pure, fruity goodness.

Perfectly chewy and bursting with flavor, these treats are a hit with kids and grown-ups alike! Whether you’re looking for a fun snack, a lunchbox surprise, or a better-for-you candy alternative, these gummies will not disappoint!

These cute little gummies are made with real fruit juice (no added sugar!), and gelatin. THAT’S IT! Just two ingredients, and they taste so fruity and delicious. Not to mention the health benefits of a good quality beef gelatin.

RECIPE:
- 1 cup fruit juice (I used pineapple juice)
- 1.5 tbsp beef gelatin

* Pour your juice into a small sauce pot over medium heat. Cover it with a lid and let it come up to a simmer (not quite a full boil).�
* Once the juice is simmering, add the gelatin and whisk continuously until it is completely dissolved. Remove from the heat and gently pour the mixture into a silicone mold. You can use fun shaped gummy molds, or larger square shaped ones. You can also just pour it into a container with sides if you don’t have molds. You will just cut the molds yourself once they are firmed up. �
* Carefully place the molds in the fridge for at least 2 hours so they can form a gel. �
* Remove them from the molds (or cut them if you used a larger container), and enjoy!�

🍃SPRING IS HERE

Spring is finally starting to peek through over here, and I don’t know about you, but this time of year always makes me crave fresh, colorful, simple meals. After a winter of cozy soups and warm comfort foods, it feels so good to load up our plates with crisp veggies, bright flavors, and lighter dishes again.
 
So today I’m sharing a roundup of some of my favorite spring salads from the blog — the kind that are fresh, nourishing, and easy enough to throw together on a busy day.

🍝QUICK AND HEALTHY PASTA DINNER

This is the type of dinner I throw together when I’m short on ingredients, and have box of pasta in the pantry. It is full of veggies, packed with protein, and is always a hit in our house 👊🏼

RECIPE:

- 1 box pasta (I used )
- 1 jar of red sauce
- 8oz package of mushrooms, chopped
- 1.25 lb ground turkey
- garlic powder, salt & pepper

- Fill a large pot with water and bring it to a boil. When boiling, add the pasta and cook according to the package.
- Meanwhile, preheat a large cast iron skillet over medium heat. Add about a tbsp of olive oil, and add the mushrooms. Cook, stirring occasionally for about 5 minutes, until they are brown.
- Remove the mushrooms and add the ground turkey. Season with garlic powder, salt, and pepper. Stir occasionally for about 10 minutes or so, until it is brown and cooked through.
- Drain the pasta and add it back to the big pot. Combine the pasta, red sauce, mushrooms, and ground turkey.
- Stir it all together and serve it in bowls!

If you have Celiac Disease, or any type of food restrictions, traveling can be stressful. It is normal to have anxiety about whether or not your meal is going to be safe, or if you will even be able to find food in the first place. The last thing you want is to be sick on a trip where you are supposed to be having fun!

But not to worry, I’ve got your back👊🏼 My husband and I have traveled a lot over the past decade, and I’ve learned some things along the way. I always have a strategy, and a list of things that I do before and during every trip that make things a lot easier, and safer.

By doing your research and having a plan, you will make your trip so much more enjoyable!

HIGH PROTEIN BREAKFAST IDEAS 💪🏼

If mornings at your house look anything like ours, they’re a little chaotic… a little loud… and someone is always asking for food the moment their feet hit the floor. 😅
 
And if there’s one thing I’ve learned as a mom, it’s this: protein at breakfast makes a HUGE difference.
When we start the day with a high-protein breakfast, everyone is happier, fuller longer, and we avoid the mid-morning “I’m starving” crash (you know the one).

Getting kids to eat protein can be hard sometimes, especially if you have picky eaters! It can also be hard to know the best sources of protein for kids and toddlers, and how to come up with clever ways to add it into their diet. We know protein is important for our kids’ growth and development, but we’re often not sure how much they need or what the best kinds are for them.

Fortunately, protein intake isn’t something most parents need to stress about. There is a good chance that most kids get enough protein in a day without putting too much pressure on them. We need to focus on where they are getting their protein from, rather than stressing about how much they are eating each day.

My best piece of advice is to always bring a dish when attending someone else’s Thanksgiving meal so that you can know that you will at least have something to safely eat.
