Rich in beta-carotene (which our bodies convert to vitamin A), they're great for eye health and have antioxidants that keep your skin glowing and immune system strong.

But that's not all—carrots are also a good source of vitamins K and C, as well as potassium, helping to keep your heart healthy and your body in tip-top shape. 🌟

👩‍🍳 And now, let Nibbles inspire you with a simple, delicious recipe to make the most out of this versatile veggie:

Nibbles' Roasted Carrot Coins with Thyme

Ingredients:
- 1.5 lbs of carrots, washed and sliced into 1/4 inch thick coins
