Mushroom Truffle Pizza 🍕🌱 Seriously, this recipe is SO good. The perfect comfort food for your quarantine made with an almond four crust.
Ingredients:
• 2 tbsp olive oil, plus more for brushing
• 4 oz baby bella mushrooms, stems removed and sliced into 1/4-inch slices
• 2 large garlic cloves, finely chopped
• 1 tbsp chopped fresh rosemary
• 2 tsp chopped fresh thyme leaves (plus more for decoration)
• 5 oz grated mozzarella cheese
• 3 oz Parmesan cheese
• White truffle oil, for drizzling (2 tsp roughly)
Instructions:
• Start by making the crust. I used almond flour. Making the dough is pretty simple. Follow the instructions on the box. Just make sure you roll the dough thin enough! Cook the crust ~5 minutes. The crust can be a little dry so add a thick layer of olive oil once it’s out of the oven.
• Prepare mushrooms: Heat large skillet over very high heat. Add the olive oil, followed by the sliced mushrooms. Continue to saute for 5 to 6 mins. Season to taste with s + p.
• Add the chopped garlic and continue to saute for ~1 to 2 mins. Add the chopped rosemary and thyme, and continue to cook over medium high heat ~ 1-2 mins. Set aside mushrooms to cool.
• Take pizza crust out of the oven. Brush the top of the dough lightly with olive oil. Sprinkle the mozzarella cheese evenly over the pizza, leaving a 3/4-inch border on the edges. Spoon the mushrooms and distribute them evenly on top of the cheese. Then add a layer of Parmesan cheese to the top.
• Bake the pizza another ~10 minutes. Remove from oven and immediately drizzle truffle oil. Add additional thyme & serve 💫
