Laced up and ready to tackle my workout today!! Still have a bad sinus cold... would have been so easy to give in and not get my cardio done today but it's a new month, it's a Monday and in my accountability group it's the first day of our May Prize Time Challenge so I have to show up!! May not be able to give it my 100% today but it is definitely better than 0%..

I really regretted that workout... said no one EVER!!!

Had to crank the tunes real loud today and tap into my inner strength this morning to get my workout done!!! Not everyday is going to be easy but if you believe that you CAN DO IT then you will!! It's that simple!

The ONLY thing keeping you from getting what you want is the story you keep telling yourself about why you can't.. You really are stronger than you believe!!

Salads do not have to be boring... Check out this delicious recipe!!

Almond, Berry, and Chicken Spinach Salad

Ingredients:
1 large boneless skinless chicken breast (plus olive oil)
4 cups baby spinach remove stems if desired
1/2 cup fresh blueberries
1/2 cup fresh strawberries
1/2 cup clementine or mandarine oranges
2-3 tablespoons feta cheese
2-3 tablespoons slivered almonds
Salt and pepper

Dressing:
1/4 cup olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon Dijon mustard
1/2 teaspoon honey
Optional: squeeze of lemon, Mrs. Dash chicken grilling blends seasoning, salt

Instructions:
Prepare the fruits and lettuce by washing and completely drying. If the spinach is still wet it won't absorb the dressing very well.

Remove strawberry stems and slice them. Remove clementine skins and separate into sections. OR drain a can of mandarine oranges.

Remove fat from chicken. Sprinkle both sides of the chicken breast with salt, pepper, and Mrs. Dash chicken grilling blends to taste.

Lightly coat a large skillet with 2 to 3 teaspoons olive oil.

Preheat the skillet over medium-high heat until hot. Place the chicken in the skillet and then reduce the heat to medium and cook until the meat is no longer pink and the juices run clear, or about 8 to 12 minutes.

As the chicken cooks, turn it occasionally so it browns evenly. If it starts to brown too quickly, reduce the heat to medium-low.

Combine all of the dressing ingredients (olive oil, balsamic vinegar, Dijon mustard, and honey) into an airtight jar. Add some salt to taste. Shake until well combined. Toss the dressing with the spinach in a large bowl. Add in the fruit and feta cheese and toss again. If desired squeeze some fresh lemon over the salad.

Toast the almonds in a small skillet over medium heat for about 1-2 minutes stirring constantly. Add the almonds to the salad.

Once the chicken is finished, remove from heat and slice or chop it. Let it cool and then add it to the salad.

If not enjoying immediately do not toss with the dressing or feta cheese until ready to serve.

Enjoy!!

Today's workout was all about the arms and PROGRESSIVE SETS!! Time to get tank top ready for Summer 💪💪💪

So what is a progressive set?!! Doing 6 sets of one exercise and increasing weight while decreasing reps... then using heaviest weight (low reps) going back to lightest weight (high reps)... For example, start with 10lbs and do 15 reps.. go up to 15lbs and do 12 reps.. go up to 20lbs and do 8 reps... then keep your 20 lbs and do another 8 reps.. drop to 15lbs and do 12 reps.. drop to 10lbs and do 15 reps!! Want to feel the burn?!! Give it a try!

Ladies, never be afraid to lift weights!! YOU. WILL. NOT. GET. BULKY. Instead, you will build lean muscle, rev up your metabolism and burn more calories at rest!! I would say that's a WIN WIN!!!

** TASTY TUESDAY RECIPE **

Krispie Baked Chicken

Ingredients:

1lb chicken tenderloins
1 egg and 1 egg white
2 cups of brown rice cereal
1/2 tsp Himalayan salt
1/2 tsp garlic powder
Sprinkle of pepper
Olive oil cooking spray

Instructions:

1. Preheat oven to 400 degrees.
2. Place rice cereal in a bag along with spices. Using a rolling pin (or your hands) crush cereal a bit, leaving some larger pieces in tact. Place cereal mixture in a bowl.
3. Mix egg and egg white together. Dip chicken pieces first in the egg, then in the rice cereal mixture.
4. Place breaded chicken on a baking sheet lined with parchment paper.
5. Before baking, spray both sides of chicken with olive oil spray. Bake at 400 degrees for 25 minutes or until juices run clear.

FIT TIP TUESDAY... Constantly Challenge Yourself

If you want to see change, if you want to build your endurance and strength, if you want to break a weight loss plateau, if you want to feel amazing ---> then never stay comfortable!! Push harder than you think you can, try something you think you can't do, try lifting heavier, when you think you are done, do one more!!

Today I thought these burp*e diamond jumps were going to kill me 😂😂😂 At first I was thinking to modify but instead I challenged myself to see how many I could do before modifying... next time I will try to do 3 more!! You never know what is possible until you try...

Yummy!! Tonight's sweet treat (healthy version)....

Chocolate Mousse with Fresh Raspberries

INGREDIENTS:
¾ cup unsweetened almond milk
3½ oz dark chocolate
2 cups plain greek yogurt
1 tbsp honey or pure maple syrup
½ tsp vanilla extract

INSTRUCTIONS:

Pour the milk into a saucepan and add the chocolate, either grated or very finely chopped or shaved. Gently heat the milk until the chocolate melts, being careful not to let it boil.

Once the chocolate and milk have fully combined, add the honey and vanilla extract, mix well.

Spoon the greek yogurt into a large bowl and pour the chocolate mixture on top. Mix together well before transferring to individual bowls, ramekins or glasses.

Chill in the fridge for 2 hours. Serve with a small spoonful of greek yogurt and some fresh raspberries (optional).

The chocolate mousse will keep in the fridge for 2 days. ENJOY!!

4 Tips to Help You Stick to Your Goals on the Weekend....

1) HAVE A PLAN

Just because it’s the weekend DOESN’T mean it’s a free for all. Listen carefully; if you aren’t even a little conscious of what you are doing/what you are consuming, you will not achieve your goals.

Now I’m not saying don’t have fun and treat yourself, I’m saying HAVE A PLAN.

Plan one instance over the weekend where you will indulge and treat yourself (note - I didn’t say binge). For the rest of the weekend, make mindful decisions the best you can.

2) DON’T BECOME SEDENTARY

Move around. Just because it’s the weekend doesn’t mean you can’t get a little sweat in.

Don’t want to hit the gym? That’s okay, get creative and do something outdoors and different. Try hiking, going for a bike ride, a run/walk outside, a park workout, try a new class, go swimming…bottom line you don’t have to stick to your same ol’ routine.

3) DRINK LOTS OF FLUIDS

Let me recap that…drink lots of WATER, not booze ;).

Water detoxifies the body and is by far the best thing for you. Water will help fill you up, help in creating glowing skin and helps your body to stay in tip top shape. A cue that you’re not hydrated? Your p*e is yellow! Drink that water!!

4) GET YOUR ZZZ’S

I know it’s easy to get into the habit of going to bed later and waking up later on the weekends but try to stay on somewhat of a schedule. Your body needs 6-8hours of sleep to run optimally. If you typically go to bed at 9pm and wake up at 6am on weekdays try stay within that range give or take 2 hours so that your body isn’t too shocked when getting back into that routine on Monday morning.

I challenge you to try being more aware of these 4 things this weekend! If you do it will make it MUCH easier to stick to your goals so you can get the results you deserve!!

My fitness accountability group is full but more people have been messaging me so I have decided to open up a few EXTRA spots for my group in April to accommodate everyone interested!!

Yesterday I procrastinated... Today I crushed it!! Double day for me! Burned out legs with cardio then burned out shoulders with weights!!
